TrueBean Coffee Company came from a place of reverence for people, the earth, and the ritual of self-care. Jason Dittly, founder and owner of TrueBean Coffee Company has spent years researching and developing a platform of business that has come to fruition with this coffee roasting venture. At his core, Dittly strives for truth in all aspects of his life in order to honor himself, those around him, those before us, and the generations to come after. Extracted from an existential conversation on philosophy and belief, all acts can be done in truth, as simply as your morning cup of coffee. Reflection and honor is due from the moment you roll out of bed, sleepy eyed and foggy headed. What will be the first fuel of your day? How will you honor the body you have been given? Those of us that are part of TrueBean believe we all deserve the highest quality experience available to us at any given moment. I do not mean lavish, I do not suggest extravagant, but I do insist that you consider reverence. Coffee is nothing more than the seeds of fruit that are roasted, ground, steeped in water, then consumed; it is so simple.  Yet, in that simplicity, that cup of coffee, you have the opportunity to honor yourself, the earth, farmers, distributors, and roasters. Nearly 100 sets of hands work to bring you a single cup of coffee. Honor those hands. 

Jason begins his work long before the coffee is poured into his roaster. He takes great care in sourcing the coffee beans from distributors that ensure ethical work and living environments for their farmers. He receives in dozens of samples, each of which is meticulously inspected, roasted, sampled and scrutinized. Only those that meet the level of quality Dittly would enjoy to drink are ordered in to be roasted, nothing less. This all comes from years of experience in owning a cafe and sourcing in the best coffee the business could find at the time. Then came extensive, and continuing education, throughout the Specialty Coffee Association. Dittly is the only SCA accredited roaster in Western New York. 

Speaking of roasting... this is not a one roast fits all operation. Each coffee variety from every region, each individual batch, on any given day will be roasted a little different to enhance what already lies within the bean. To enhance what the farmers in Ethiopia, Colombia, or Brazil pour their lives into developing. The roaster’s job is to develop the nuances of each bean, pulling forward its acids, sugars and perfumes. Allowing the customer to be transported away from their cup, to visit a far-off land, to become witness to something greater than the cups of coffee sipped before, and to invigorate a passion for the cups to follow. 

TrueBean does not stop at the retail bag. Once the coffee is in your hands is when the conversation gets fun. What do you consider when brewing your coffee? Have you ever thought about the quality and purity of your water? Water, after all, makes up about 98.5% of the drink. How about the grind size, brewing method, water temperature, length of steep time, duration of time your coffee has been ground until it is steeped? Each element has the power to enhance or diminish your experience. Are you drinking coffee that was processed into a little plastic cup, at some far-off factory, that sits on a retail shelf for months before you bring it home to brew? Would you consider a different routine, with simple equipment, that would build communities (literally) and be better practices to ensure the health of the planet? Think about it, really reflect on it. We live in a time where convenience and speed directly contradict quality and sustainability. Where would you like to stand on this, what would you like your simplest acts to stand for?

TrueBean Coffee Company will not change the world, a company cannot do that. However, we strive to create a community that is rooted in True practices, True beliefs, True community, and True Self Respect. These small movements will create ripples, and if we all create ripples of good we will surely change things around here. For ourselves, neighbors, earth, and our future.
